• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • ½ red onion, diced
  • ½ cup fresh or frozen corn
  • 1 oz blue cheese
  • 2 thin slices of deli ham, diced
  • ¼ teaspoon paprika
  • Salt and black pepper to taste
  • 1 medium zucchini
  • Olive oil
  • ¼ cup shredded mild cheddar cheese

Is there a dish more summer invoking that something made with garden zucchini and fresh sweet corn? We don’t think so! And even if that’s not your goal, this snack is just too delicious and easy to pass up for your next FunGuy bite.

And yes, two cheeses may sound a little much, but believe in the power of sharp blue cheese and the glue that is melted cheddar. It’s worth the extra dairy and helpful calories.

DIRECTIONS:

  1. Preheat the oven to 400F. Line a baking sheet with parchment paper.
  2. Place the FunGuy mushrooms, red onion, corn, and ham into a bowl. Crumble the blue cheese into the bowl and season with paprika. Taste and add salt and black pepper as needed.
  3. Trim both ends of the zucchini and cut it into ¼ inch thick rounds. Lay the zucchini slices onto the prepared baking sheet and drizzle olive oil over them.
  4. Spoon the mushroom, corn and blue cheese mixture onto each zucchini slice and add a little of the shredded cheddar cheese on top. The cheddar is to help hold the topping on the zucchini slices as it melts.
  5. Place the baking sheet in the oven and allow to cook about 8-10 minutes or until the cheese has melted and the tops have started to turn lightly brown. Remove the zucchini bites from the oven and allow to cool 2-3 minutes before serving.
