• Ingredients:
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 8oz package of whole FunGuy white button mushrooms
  • 1 red bell pepper, sliced
  • ¼ cup white wine
  • 3 cups fresh spinach
  • Salt to taste

It’s Friday night and after a long work week all you want is a glass of wine to relax, but that pesky New Year’s resolution is still in effect!

What to do with that cup of white sitting on the table, just begging to be opened? Why cook with it of course! Pour a glass for the pan and a take a sip for the chef. You know, for quality control.

DIRECTIONS:

  1. Heat olive oil in a deep skillet over medium high heat. Add in the onion and garlic and cook for 1 minute. Add the FunGuy mushrooms to the pan and toss with the onion and garlic. Cook 5 minutes, turning the mushrooms occasionally as they brown. Next add in the bell pepper and cook for 3-4 minutes.
  2. Pour in the white wine and scrap any stuck bits from the bottom of the pan. Cook everything for an additional 3-5 minutes or until the liquid has reduced. Add the spinach to the pan and cover, letting the spinach wilt for 2 or 3 minutes.
  3. Remove the mushrooms from the heat and serve hot!
