• Ingredients:
  • ½ teaspoon salt
  • ¼ teaspoon ground cayenne pepper
  • 1 teaspoon ground allspice
  • ¼ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1/8 teaspoon ground clove
  • ¼ teaspoon powdered garlic
  • 1/2 teaspoon dried thyme
  • 3 tablespoon olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 boneless skinless chicken breasts, cubed
  • ½ papaya, peeled and seeds removed
  • 1 avocado, peeled and seed removed
  • 1 small onion
  • 1 medium orange
  • 1 large lemon
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground coriander
  • Pinch of red pepper flakes (optional)
  • 4 cups cooked white rice

Bring a jerk to dinner tonight! Not that kind of jerk, but something much more fun; jerk chicken and FunGuy mushrooms to be exact. Top with a bit of fresh papaya and avocado salsa to cool the heat and bring out that island flavor. It’s sure to bring images of warm Caribbean water and tropical drinks to mind. Or at least make your week feel a little less “jerky” and more Fun!

DIRECTIONS:

  1. In a large bowl, mix together the salt, cayenne pepper, allspice, cinnamon, nutmeg, clove, garlic and thyme. Add in the FunGuy mushrooms and chicken and toss well to coat everything.
  2. Heat olive oil in a large skillet over medium high heat. Place the mushrooms and chicken into the pan and allow them to cook 8-10 minutes or until the chicken is cooked through, stirring occasionally to keep everything from sticking.
  3. While the chicken and mushrooms are cooking, prepare the salsa.
  4. On a cutting board, cut the papaya and avocado into small cubes and put in a bowl. Finely chop the onion and add to the papaya and avocado.
  5. Juice the orange and lemon and pour it into the bowl. Season the salsa with the salt, pepper, coriander and red pepper flakes. Gently stir to mix well.
  6. Serve the chicken and mushrooms over white rice and top with the fresh papaya and avocado salsa!
