• INGREDIENTS:
  • (1) 10-ounce Package of Sliced FunGuy Mushrooms (lightly brushed with a damp paper towel & sliced)
  • 1 Medium Diced Yellow Onion
  • 2 TBSP Butter
  • 2 TBSP All-Purpose Flour
  • 4 Fresh Sage Leaves
  • 1 tsp Dried Thyme
  • 1 Bay Leaf
  • 3 Cups Beef, Chicken, or Vegetable Stock
  • 1 TBSP Olive Oil
  • Salt & Pepper

We can only assume that an inspired FunGuy fan invented gravy, just so they would have an excuse to stick a whole lot of mushrooms into every meal! This luscious sauce can be adjusted to accompany meatloaf, chicken, pork, or a vegetarian dish just by using the stock that best accompanies the meat.

Now, the very thought of making mushroom gravy intimidates some folks, but be brave! Follow this foolproof recipe for smooth, velvety, lump-free mushroom and onion gravy, handed down through generations of FunGuy families. You will be a gravy expert in no time.

DIRECTIONS
  1. In a small saucepan, add 3 cups of stock, sage leaves, bay leaf, and dried thyme. Bring the heat up just until you see a boil starting. Lower the heat, add the mushrooms, and let simmer uncovered.
  2. Heat a skillet over medium-high heat. Add olive oil and wait 30 seconds. Add the diced onions, stirring occasionally.
  3. Cook the onions just until softened. Add 2 TBSP butter until melted, then add 2 TBSP of flour. Use a whisk to stir the mixture until combined. Let the flour-butter-onion mixture cook for at least 1 minute, stirring occasionally.
  4. Using a pair of tongs, pick out the bay leaf and sage leaves in the simmering stock and discard, then ladle in 1 cup of simmering stock to your flour-butter-onion mixture and whisk carefully until mixed.
  5. Add the other cup of stock and continuing whisking as the gravy thickens.
  6. Use the additional cup of stock to loosen the gravy as needed.
  7. Add the sliced FunGuy mushrooms, lower the heat, and let simmer until the mushrooms are cooked through. Add salt and pepper to taste.
  8. Extra pinches of black pepper really bring out the kick in this FunGuy Family Gravy recipe. You can experiment to find the right amount for your taste.
