• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 10 oz canned tuna packed in water, drained
  • 1 small onion, diced
  • 1 small tomato, diced
  • 2 small pickles, minced
  • 2 tablespoons mayonnaise
  • 1 teaspoon lemon juice
  • ½ teaspoon ground pepper
  • Salt to taste
  • 4 slices provolone cheese, cut into ½ inch squares
  • Pinch of dried dill

Love a good tuna melt, but an entire sandwich is just too much? Then tuna up the taste this weekend with a batch of FunGuy stuffers instead!

All the melted cheese and creamy tuna salad filling that you crave, stuffed into bite sized mushroom caps. Sure they are big bites, but who cares as long as it fits?

DIRECTIONS:

  1. Preheat oven to 350F.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and/or a small teaspoon to remove any leftover bits and place each mushroom cap on a parchment lined baking sheet.
  3. In a bowl, mix together the tuna, onion, tomato, pickle, mayonnaise, lemon juice, and ground pepper. Taste before adding additional salt.
  4. Spoon the tuna mixture into each mushroom cap and place the baking tray into the oven. Allow the mushrooms to bake for 20 minutes.
  5. Pull the tray from the oven and place a piece of cheese on each mushroom cap and place it back into the oven to bake for an additional 5-10 minutes, or until cheese has melted and is slightly browned.
  6. Remove the stuffed mushrooms from the oven and immediately sprinkle a little bit of dried dill on top of each. Allow the mushrooms to cool a couple of minutes before serving.
