• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 4 boneless skinless chicken breasts
  • 1 onion
  • 3 cloves garlic
  • 1 cup oats
  • ½ teaspoon coarse salt
  • 2 teaspoons oregano
  • ¼ cup parmesan cheese
  • ½ cup yogurt
  • 2-3 tablespoon milk
  • 2 tablespoons olive oil
  • 2 14-ounce cans of diced tomatoes
  • Salt to taste
  • Parmesan cheese

Why did the FunGuy cross the road? We don’t know either, and suspect that joke has been over played! 

Something that will never be over played is this healthy, eggless, baked Chicken parmesan with a simple, but no less tasty, mushroom marinara sauce that comes together in less than an hour.

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stems using your thumb and set them aside. Slice the caps thinly. Peel the onion and garlic and dice the onion. 
  3. Place the mushroom stems, oats, garlic cloves, coarse salt, oregano, and parmesan cheese into a food processor or blender. Pulse until everything is broken into crumbs. Transfer the crumbs to a large shallow dish. In another shallow bowl, mix the yogurt and milk together. 
  4. Dip the chicken breast into the yogurt milk mixture, making sure it’s coated, then into the oat crumbs. Coat the outside the chicken in the crumb and place it on the prepared baking sheet. Repeat with the rest of the chicken.   
  5. Place the chicken into the oven and allow them to bake, turning once halfway through, about 30 minutes or until cooked through and an instant read thermometer reads 165F. Remove the chicken once it’s done; cover to keep warm until ready to plate. 
  6. About 15 minutes before the chicken is done, prepare the marinara sauce. 
  7. Heat a sauté pan over medium high heat. Add the olive oil and sauté the onion for one minute. Add the mushrooms and cook another 3 minutes. Add in the tomatoes and stir well to combine. Reduce the heat to medium and allow them to cook about 7-8 minutes. Turn off the heat, taste, and season with salt as necessary.
  8. Serve the chicken parmesan with the mushroom marinara and thin shavings of parmesan on top.
