• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 8oz package of whole FunGuy white button mushrooms
  • 2 medium sized tomatoes, thinly sliced
  • ½ bell pepper, thinly sliced
  • 4-6 ounces of raclette cheese, cut into thick slices
  • Salt and pepper
  • Crusty bread

Lazy weekends call for easy to make food and it doesn’t get much easier than this simple baked raclette and FunGuy mushrooms recipe!

This recipe only requires mushrooms, fresh tomatoes, and peppers be tossed into a baking dish and topped with Swiss raclette cheese. It’s then baked in the oven for just a few minutes until it has become a bubbling melty cheesy mixture that is perfect on slices of crusty bread! 

So easy and delicious, you’ll be wondering why you didn’t try it sooner!

DIRECTIONS:

  1. Preheat oven to 375F. 
  2. Brush off any debris from the whole FunGuy mushrooms with a damp cloth, trim the stems, and place them in a baking dish. Add ¾ of the sliced FunGuy mushrooms, ¾ of the tomatoes, and ¾ of the bell pepper to the mushrooms before seasoning with a sprinkle of salt and freshly ground black pepper.  Lay the raclette on top in an even layer and add the rest of the sliced mushrooms, tomato, and bell pepper on top. 
  3. Place the dish in the oven and bake for 10-15 minutes, or until the cheese has melted and the mushrooms have become tender. Remove the dish from the oven and let cool 2-3 minutes. 
  4. Cut the crusty bread into thin slices serve with the mushrooms, tomato, pepper, and cheese on top of each slice.
