• Ingredients:
  • 1 tablespoon olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 heads endive, cut in half
  • 2 tablespoons butter
  • 1 small onion, thinly sliced
  • Pinch of salt
  • ¼ cup shredded parmesan cheese

A spoonful of butter goes a long way to mellow the bitter endive and elevate our favorite earthy FunGuy mushrooms. Sprinkle a bit of sharp parmesan on top and you’ve got a plateful of nutritious and enjoyable fare!

DIRECTIONS:

  1. Preheat the oven on broil.
  2. Heat the olive oil in a sauté pan over medium high heat. Add in the FunGuy mushrooms and cook 4-5 minutes or until browned. Transfer the cooked mushrooms to a bowl and set aside.
  3. Turn the heat down to medium and melt the butter in the pan. Lay the endive halves in the pan, cut side down. Allow the endive to cook 3-5 minutes then turn and cook another 3 minutes. Transfer the endive to an oven safe casserole dish. Season it with a pinch of salt.
  4. Add the onion slices and mushrooms to the endive and sprinkle the parmesan on top.
  5. Place the casserole dish in the oven and cook 5-10 minutes or until the onions are tender and the cheese has browned.
  6. Remove the dish from the oven and allow to cool 3-5 minutes before serving.
