• Ingredients:
  • 10 oz package of FunGuy Mushroom Stuffers
  • 2 jalapeño peppers
  • 4 tablespoons salsa, mild or medium
  • 1/3 cup shredded cheddar cheese
  • 2 tablespoons sour cream

The warm weather seems to be in full swing which means all the FunGuys out there will be lounging pool side. What goes best with pool side fun? Why lots of delicious food of course!

Like these fantastic FunGuy mushrooms stuffed full of gooey cheese, fresh salsa and just a bit of spicy jalapeños for good measure. They’re great for kicking off any summer fiesta!

DIRECTIONS:

  1. Preheat oven to 375F.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the ends of each mushroom stem and discard. Pop out the rest of the stem using your thumb and/or a small teaspoon to remove any leftover bits and place each mushroom cap on a parchment lined baking sheet. Mince the stems and place them in a bowl.
  3. Remove stem and white core from the jalapeños and chop 1 and a half peppers and add them to the bowl with the chopped mushroom stems. The other pepper cut into slices and set aside.
  4. Add the salsa and cheese to the bowl and mix together with a spoon. Spoon a heaping amount of the filling into each mushroom cap.
  5. Place baking tray into the oven and allow to bake 20-25 minutes or until the cheese has browned a bit on top.
  6. Remove the stuffed mushrooms from the oven and let them cool a minute or two before topping  each with a dollop of sour cream and a Jalapeño slice.
  7. Serve immediately.
