  • • 8oz package of whole FunGuy white button mushrooms
  • • 2 spring onions, sliced and tops reserved
  • • 4 tablespoons butter
  • • 2 tablespoons flour
  • • 1 cup milk
  • • salt and pepper to taste

  • • 1 ½ teaspoons baking powder
  • • ¼ teaspoon salt
  • • ¼ cup butter
  • • 1 teaspoon fresh minced chives
  • • 6 tablespoons milk

There comes a time every year when we must show how much that one person who gave up their sanity to make sure we grew up relatively normal is appreciated. That’s right, Mother’s day is upon us and it’s time to let her know you care with a homemade breakfast, preferably made by her little baby.

Here’s a recipe that’s certain to help you secure your place as favorite with some fresh chive biscuits smothered in a thick savory mushroom gravy.

DIRECTIONS:

  1. Brush off any debri from the FunGuy mushrooms with a damp cloth and cut them into quarters on a cutting board and set aside.
  2. Melt butter in a skillet over medium high heat.
  3. Once the butter has melted add in the mushrooms and onions and saute for 3-4 minutes.
  4. Sprinkle the flour over the mushrooms and stir it to keep from clumping. Allow to cook another 1 minute or until the flour has dissolved.
  5. Stir in the milk with a whisk until smooth. Allow to cook until thick and bubbly, whisking frequently.
  6. Remove from heat and season with salt and pepper.

Biscuits

  1. Preheat the oven to 450F.
  2. In a large mixing bowl, whisk together flour, baking powder, chives and salt.
  3. Cut the butter into the flour with a fork or by using your fingers to blend it into the flour until it becomes a coarse sandy texture.
  4. Pour the milk into the flour and stir with a fork to combine. Mix until the dough is soft, moist and pulls away from the sides of the bowl.
  5. Turn the dough out onto a well floured surface and knead lightly for 2-3 minutes. Roll out the dough to about ½ inch thick and cut with a round floured cookie cutter. Gather the dough scraps together and repeat until all the dough is cut into biscuits.
  6. Place the biscuits on a parchment lined baking sheet and put in the oven to bake for about 10 minutes or until golden brown.
  7. Serve biscuits warm with FunGuy mushroom gravy on top and sprinkle reserved green onion on top.
