• INGREDIENTS:
  • 2 tablespoons butter
  • 4 ounces FunGuy mushrooms, coarsely chopped
  • ¼ teaspoon salt
  • 2 cloves garlic, minced
  • 2 tablespoons dry sherry
  • ¼ cup whipping cream or half-and-half
  • 15 frozen phyllo shells, thawed and warmed
  • ¼ cup chopped fresh parsley

DIRECTIONS:

  1. Melt the butter in a large skillet over medium heat.
  2. Add mushrooms and salt. Cook for about three minutes, or until tender—be sure to move them around a little with a wooden spoon.
  3. Add the garlic, cook about 20 seconds, or until the garlic is fragrant.
  4. Add the sherry and stir it in.
  5. Stir in the cream; cook for about two minutes, or until the cream is thickened slightly.
  6. Remove from the heat.
  7. Gently fill the phyllo shells with the mushroom mixture.
  8. Sprinkle with the parsley. Serve immediately.
