• Ingredients:
  • 1 head of cauliflower
  • 1 cup cherry tomatoes
  • 8oz package of sliced FunGuy white button mushrooms
  • 3 tablespoons olive oil, divided
  • 1 red onion
  • 3 cloves garlic
  • 3-4 star anise
  • 3 cloves
  • 1-2 cardamom
  • 1 ½ tablespoons curry powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt, divided
  • fresh cilantro

Fresh seasonal vegetables are always delicious in their most pure form, but a FunGuy knows when to spice things up a bit! 

This recipe for roasted curried cauliflower and mushrooms with juicy cherry tomatoes is a perfect example of taking nature’s bounty and elevating it to a whole new level, that will have everyone wanting one more bite! 

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with aluminum foil. 
  2. Thoroughly wash the cauliflower and tomatoes before slicing the cauliflower about ¼ – ½ inch thick. Transfer the cauliflower and FunGuy mushrooms o the baking sheet and put the tomatoes in a mixing bowl. Peel the onion and garlic and thinly slice the onion and finely mince the garlic and add them to the cauliflower and mushrooms.
  3. Place the star anise, cloves, and cardamom in a mortar and grind it with a pestle to break it down before mixing it with the cinnamon and ginger. 
  4. Drizzle half of the olive oil over the cauliflower and mushrooms and season with the curry powder.  Add the rest of the olive oil to the tomatoes and season with the ground up spice mix, tossing well to evenly distribute. Add the seasoned tomatoes to the cauliflower and mushrooms and drizzle any left over spices on top. Sprinkle the salt evenly over everything. 
  5. Roast the cauliflower and mushrooms in the oven for 20-25 minutes or until the cauliflower has cooked through and the tomatoes have started to split and release their juices. 
  6. Remove the curried cauliflower, mushrooms, and tomatoes from the oven and allow to cool about 5 minutes before serving with fresh cilantro on top.
