- Ingredients:
- 2 10oz packages of FunGuy Mushroom Stuffers
- ¼ cup whole milk
- 1 egg, beaten
- ¼ cup shredded cheese
- ¼ cup diced ham
- 2 spring onions, sliced
- pinch of salt
- fresh ground black pepper

This recipe for mini quiche stuffers is the perfect addition to any Easter Sunday brunch, or lunch, and is easy to make around the ham, lamb, or favorite roast! So easy in fact, you may need to make a double batch!
DIRECTIONS:
- Preheat oven to 400F. Line a baking sheet with parchment paper.
- Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Place the mushrooms, hole side up, on the baking sheet.
- In a large bowl, whisk together milk, beaten egg, salt and pepper. Stir in the diced ham, green onions, and cheese. Pour a large spoonful of the egg mixture into each mushroom cap.
- Bake the mini quiche stuffers in the oven for 25-30 minutes or until the filling has puffed up, and browned on top, and the mushrooms are cooked through. Remove the quiches from the oven and allow them to cool about 10 minutes before serving.
