- Ingredients:
- 8oz package of whole FunGuy white button mushrooms
- 4-6 padrón peppers
- 1 onion
- 3 large tomatoes
- 1 small orange bell pepper
- 1 small orange bell pepper
- 2-3 tablespoons fresh cilantro
- 1 lemon or lime, juiced
- ½ -1 teaspoon coarse salt
The FunGuy loves taco Tuesday as much as anyone, but it doesn’t matter if there isn’t a good pico de gallo on the table to add to all of those soft and crunchy tacos!
That’s why we have a new fresh, flavorful, and easy padrón pepper taco Tuesday just for you. It has all the good stuff: juicy tomatoes, crunchy raw onion, sweet pepper, and a handful of padrón peppers for a gentle bite of heat!
DIRECTIONS:
- Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the stems. Mince the mushrooms on a cutting board and transfer to a large bowl.
- Remove the stems and seeds from the padrón peppers, mince the peppers, and add them to the bowl. Peel and mince the onion and add to the bowl. Remove the stems from the tomatoes and bell peppers, dice them, and add to the bowl. Roughly chop the cilantro and add it to the bowl.
- Cut the lemon or lime in half and squeeze the juice into the bowl with the rest of the ingredients, careful to catch any seeds. Season the pico de gallo with salt and stir well to combine. Taste and adjust salt if necessary.
- Cover, refrigerate, and allow the flavor to develop for at least 15 minutes before serving. This pico de gallo is good up to 3 days if kept refrigerated.
