• INGREDIENTS:
  • 1/3 Cup chopped celery
  • 1/3 Cup FunGuy mushrooms, chopped finely
  • ¼ Cup chopped onion
  • ¼ Cup water
  • 4 Cups bread cubes
  • 2 large eggs, slightly beaten
  • 1 Teaspoon Old Bay seafood seasoning
  • ½ teaspoon ground white pepper
  • 1 Cup shucked oysters with their liquid (about 18)
  • ½ Cup half & half

This is a variation of the famous oyster stuffing from the White House. It’s luxurious and delicious, but what really makes it wonderful is the velvety swirl of FunGuy mushrooms the oysters are swimming around in.

SERVES: President, First Lady, the kids, the dog, and John from the Secret Service.
DIRECTIONS:
  1. Preheat the oven to 350 degrees.
  2. Cook the celery, onion, and water in a small saucepan over medium heat for 3 minutes, or until the liquid has evaporated. Remove from heat.
  3. Check the oysters for shell fragments (the secret service is really, really good at this).
  4. Place the bread, beaten eggs, celery mixture, seasonings, oysters, and half and half into a large bowl and blend thoroughly.
  5. Pour into a greased baking dish. Bake at 350 degrees, lightly tented with aluminum foil, for 30 minutes or until golden brown.
  6. Or stuff into a 12lb turkey and cook according to turkey cooking instructions.
