• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 3 tablespoons olive oil
  • 2 red chilies
  • ½ cup crushed walnuts
  • 2 teaspoons garlic powder, divided
  • Pinch of coarse salt
  • ¼ teaspoon black pepper
  • 1 bunch fresh chives
  • 12 ounces cream cheese, softened
  • ½ cup shredded cheddar

December is the last chance to indulge in things like creamy cheese rolled in a variety of crunchy bits before January and we all resolve to be healthy! 

This cheese log crusted with chopped FunGuy mushrooms turned “bacon” bits, crushed walnuts, spicy chili peppers, and chives is just the easy recipe you’ll want to fit that demand.  It’s sure to be happily gobbled up in no time!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Roughly chop the mushrooms into little pieces and finely mince the chilies on a cutting board. Chop the chives and divide them in half. 
  2. Heat the olive oil in a sauté pan over medium high heat. Add the mushrooms, chilies, and half of the garlic powder to the hot pan and let them cook, stirring frequently until the mushrooms brown and crisp. Turn the temperature down to medium and continue to sauté the mushrooms until they become firm and crisp, but not burnt. Turn off the heat and season it with salt. 
  3. Add half of the chives and all of the walnut pieces to the mushrooms and stir well.
  4. Spread out a sheet of parchment paper and lay the mushroom mixture out on it in an even, but compact layer.  
  5. In a bowl mix the cream cheese, cheddar, black pepper, the rest of the chives and garlic powder and stir well to combine. 
  6. Spoon the cheese onto the middle of the mushroom mixture in a long rectangle shape. Roll the parchment paper around the cheese to form a log and cover the cheese with the mushroom mixture. Twist the ends of the paper and place the log into the refrigerator for at least 1 hour and up to 1 day.  
  7. When ready to serve, unwrap the FunGuy cheese log and serve with crackers, vegetable sticks, or slices of apple!
