• Ingredients:
  • 1 pound dry spaghetti
  • water
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 boneless skinless chicken breasts, cubed
  • 8oz package of sliced FunGuy white button mushrooms
  • 8oz package of oyster mushrooms
  • 1 small zucchini
  • 1 tablespoon chopped fresh oregano
  • 1 tablespoon fresh thyme leaves
  • 2 tablespoons butter
  • Salt and pepper

When you don’t have mushroom to boogie down while cooking, then we say channel your inner FunGuy and make a dish that you can twirl on your plate!

This spaghetti will do just that with a jazzed up mix of buttery button and oyster mushrooms, succulent cubed chicken, and zesty zucchini.

DIRECTIONS:

  1. Bring a pot of water to a boil over high heat. Add in the dry spaghetti and allow to boil for about 8 minutes or until the pasta is cooked through. 
  2. While the spaghetti cooks, prepare the rest of the ingredients. 
  3. Heat the olive oil in a sauté pan over medium high heat. Add in the onion and cook 1 minute then add the garlic and allow it to cook 2 minutes or until lightly browned. Add the chicken and sauté 5-7 minutes or until browned. Add in the mushrooms and herbs and cook another 5 minutes or until browned. Add the butter to the pan and let it melt, stirring to help it coat the mushrooms and chicken. Turn off the heat. 
  4. Once the spaghetti has cooked through, drain it of excess water. Immediately add the pasta to the mushrooms and garlic while still wet. Stir the spaghetti in with the mushrooms and chicken until well combined and the buttery liquid in the pan coats the pasta. Taste and season the pasta with salt and black pepper as necessary. 
  5. Serve immediately.
