• INGREDIENTS:
  • 2 lbs. strip loin or flank steak
  • 2 Tablespoons canola oil, divided
  • 1 yellow onion, sliced lengthwise in ¼” segments
  • 1 green pepper, sliced lengthwise in ¼” segments
  • 1 red pepper, sliced lengthwise in ¼” segments
  • (1) 8-oz. box of sliced white FunGuy button mushrooms
  • ½ teaspoon kosher salt
  • Cracked black pepper to taste
  • 4 sourdough hoagie rolls
  • 1 Tablespoon butter
  • 1 Tablespoon flour
  • 1 cup milk
  • 1/3 cup beer
  • 1 cup grated cheddar
  • 1 teaspoon kosher salt

The Philly Cheesesteak is a sandwich of thinly-shaved steak, frizzled and served with cheese in a roll. It’s the only food that may be substituted for Holy Communion, following Pope John XXIII’s papal decree, “Holy Cow, that’s good!” (paraphrased). Philadelphian-approved ingredients include peppers, fried onions, and (of course!) mushrooms…  as per a stone tablet positioned outside the Philadelphia city hall.

There’s a reason why cheesesteaks have stood the test of time: the combination of ingredients, most importantly the mushrooms, is heavenly. A beautiful cheese sauce sinks into the nooks and crannies of the filling, which is enveloped by a crunchy hoagie roll. Here we will whip up a cheddar beer sauce that adds a tangy pop to the meat/veggie combo. We recommend a bright hoppy lager to accompany your meal.

DIRECTIONS
  1. Leave meat partially frozen – it is easier to slice that way. Cut thin pieces across the grain for best results.
  2. Heat 1 Tablespoon of canola oil in a large saucepan. Add sliced meat and sauté until cooked through (about 4-6 minutes per side). Remove meat and extra juices. Set aside.
  3. Put 1 Tablespoon of oil in the same pan and cook peppers and onions for 10 minutes at medium heat.
  4. Add mushrooms and cook for another 5 minutes until all the vegetables are tender.
  5. Add meat back to pan and stir with veggies on low heat.
Cheddar Beer Sauce
  1. Heat butter on medium heat.
  2. Add flour and cook for 2-3 minutes, stirring to combine thoroughly.
  3. Add milk and beer. Bring to a light boil.
  4. Add cheese, salt and pepper. Stir thoroughly.

To assemble, place the meat and vegetable mixture in a toasted hoagie roll, and drizzle with cheddar beer sauce. Have a fun meal!
