• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 15oz can chickpeas, rinsed and drained
  • 1 small onion, roughly chopped
  • 4 cloves garlic
  • ¼ cup fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • 2 tablespoons flour
  • ½ teaspoon baking soda
  • 1 lemon, juiced
  • light vegetable oil for frying
  • ½ cup yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon dried dill
  • salt and black pepper to taste
  • 4 durum wraps
  • 2 cups green leaf lettuce
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tomatoes, cut into wedges
  • 1 onion, sliced
  • 1 zucchini, sliced (or cucumber)

Make this weekend a Fun one by trying this FunGuy mushroom filled falafel! If that isn’t a mouthful to say, just wait until your mouth is full of these crispy flavorful chickpea balls.

This recipe isn’t exactly traditional thanks to the use of mushrooms to not only add some extra flavor, but to help keep them from simply crumbling to pieces. This particular recipe calls for wrapping them in durum wraps, but that’s not the only option! Stuff these falafel into pitas, or add along side salads, or just dip them in the yogurt sauce we’ve included. 

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth and put them into a food processor. Add the onion, garlic, parsley, cumin, coriander, and salt into the food processor and pulse until they are broken down into small crumbles. Add the flour, baking soda, and the juice from the lemon and pulse about 20 -30 seconds. Transfer everything to a bowl. 
  2. Using a soup spoon or an ice cream scoop, scoop out a roughly golf ball size amount of the mixture and form it into a ball. Repeat with the rest of the mixture to make about 12-16 balls. Place each into a container and put them in the refrigerator to chill for at least an hour. Remove the raw falafel from refrigerator about 5 minutes before heating up the oil to fry it in.
  3. In a deep pan heat about 1 inch of oil over medium high heat. The oil is hot enough when a 1 inch cube of bread can fry in about 30 seconds. 
  4. Carefully add the falafel to the pan in batches of 4-5 at a time and allow them to fry, turning them as they become golden brown on all sides; approximately 6-8 minutes. Transfer the cooked falafel to a plate lined with paper towels. Let the falafel cool about 5 minutes. 
  5. In a bowl whisk together the yogurt, lemon juice, and dill. Taste and season with salt and black pepper. 
  6. Lay out the durum wrap and layer with lettuce, falafel, raw FunGuy sliced mushrooms, tomato wedges, onions, zucchini, and drizzle with the yogurt sauce on top. Wrap the durum around everything and enjoy!
