• Ingredients:
  • 2 tablespoons olive oil
  • 2 medium sized zucchinis
  • 1 medium onion
  • 3 garlic cloves
  • 8oz package of sliced FunGuy white button mushrooms
  • 12oz can of low sodium crushed tomatoes
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon dried marjoram
  • ¼ teaspoon dried thyme
  • Pinch of coarse salt
  • Ground black pepper
  • 1 cup plain low fat Greek yogurt
  • 1 cup low fat ricotta cheese
  • 2 tablespoons shredded sharp cheddar

Ease into a nutritious new year with this delicious FunGuy lasagna! 

The FunGuy knows it can be a challenge to jump right into a new diet, but this lasagna has plenty of favor with a rich tomato sauce, creamy lite ricotta and Greek yogurt, and meaty FunGuy mushrooms stuffed between layers of thinly sliced zucchini. 

It’s the perfect way to jump stomach first into a year of healthy choices!

DIRECTIONS:

  1. Preheat oven to 350F.
  2. Trim the end of the zucchini and cut them very thinly lengthwise with a chef’s knife or on a wide blade mandolin using a guide. Peel the onion and garlic and trim the root ends. Dice the onion and mince the garlic. 
  3. Heat the olive oil in a deep sauté pan over medium-high heat. Add the onion and cook 1 minute. Add the garlic and cook another minute. Next, add in the mushrooms and sauté for 3 minutes. Toss the tomatoes into the pan and stir well. Reduce the heat to medium and allow everything to cook about 6-8 minutes, stirring occasionally, or until the tomatoes have reduced down and have become thick and saucy. Turn off the heat
  4. Form a single layer of zucchini strips in the bottom of a small casserole dish. Next, spoon some of the mushroom tomato sauce on top of the zucchini then add a layer of ricotta and yogurt before adding another layer of tomato sauce and zucchini. Repeat until all of the zucchini has been used. Top it off with any left-over ricotta, yogurt, mushroom sauce, and a sprinkle of sharp cheddar cheese. 
  5. Put the lasagna in the oven and allow it to bake about 20 minutes. 
  6. Remove the lasagna, allowing it to cool about 5 minutes before cutting it into four pieces and serving.
