• Ingredients:
  • 4oz dry fettuccine pasta
  • Water
  • 3 tablespoons olive oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 6 artichoke hearts, quartered
  • ½ red onion, diced
  • 2 cloves garlic, minced
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • 2 tablespoons white wine
  • 1½ tablespoons all-purpose flour
  • ½ cup vegetable broth
  • 1/3 cup heavy cream
  • Pinch of salt
  • Freshly ground pepper
  • Freshly grated Parmesan cheese

Had enough of the healthy, bland (unless it’s made with FunGuy Mushrooms, of course!) meals that you promised to your New Year’s resolutions yet?

Good, us too! Here’s the perfect way to fall off the diet wagon; with creamy FunGuy pasta. No need to feel too guilty, though. This one has some healthy artichoke hearts and mushrooms tossed in amongst all that cream and cheese.

DIRECTIONS:

  1. Bring water to a boil in a medium sized pot over high heat. Add in the fettuccine and allow it to cook 8 minutes. Drain the pasta of any excess water.
  2. Heat olive oil in a sauté pan over medium high heat. Toss in the garlic, onion, thyme and oregano and allow them to cook 1-2 minutes. Next add in the mushrooms and artichoke hearts and cook 4-5 minutes or until the mushrooms have browned. Pour in the white wine, scraping off any crispy bits from the bottom with a wooden spoon. Cook until the liquid has evaporated.
  3. Sprinkle the flour evenly over the mushrooms and stir to combine. Pour in the broth and bring it to a boil, stirring frequently. Reduce the heat to medium low and allow it to simmer as the sauce thickens. Stir in the cream and remove the pan from the heat. Season with salt and pepper.
  4. Serve immediately with freshly grated parmesan cheese on top.
