• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 bell pepper, thinly sliced
  • 1 onion, thinly sliced
  • 1 large tomato, cut into 8 slices
  • 2 tablespoons olive oil
  • 1 teaspoon herbs de Provence seasoning
  • Pinch of salt
  • 2 tablespoons Dijon mustard
  • 2 tablespoons mayonnaise
  • 8 slices of bread
  • 4-6 tablespoons butter
  • 8 slices of Gruyere cheese

National grilled cheese sandwich month is officially here, and we can’t think of a better way to celebrate than by having a gooey, melted cheese, FunGuy filled grilled cheese!

This grown-up version of the classic sandwich is a little different though. It’s stuffed with seasoned mushrooms, onions, and peppers that have been sauteed before adding them to the sandwich. Slices of fresh tomatoes are then layered in with slices of Gruyere cheese and a mix of mayonnaise and dijon mustard to kick that French flavor up a notch!

DIRECTIONS:

  1. Place the FunGuy mushrooms, bell pepper, onion, and tomato into a bowl with the olive oil, herbs de Provence, and salt. Toss them well to coat everything in the oil and seasoning. Remove the tomatoes and set them aside on a plate. 
  2. In a small bowl, mix the mayonnaise and Dijon together. Spread the Dijon mixture onto one side of each slice of bread. 
  3. Heat a saute pan over medium-high heat and add the mushrooms, peppers, and onions to the pan. Saute for 5-7 minutes or until the mushrooms have browned around the edges and the onions and peppers are soft. Transfer them to a bowl and wipe the inside of the pan with a paper towel to clean it. 
  4. Reduce the heat of the burner to medium and place the pan back onto the stove. Add 1 tablespoon of butter to the pan and allow it to melt. Lay the bread, dry side down, into the pan and layer it with a slice of Gruyere cheese, mushrooms, peppers, onions, and a slice of tomato. Top the tomato with another slice of cheese and another slice of bread, dry side up. 
  5. Allow the sandwich to cook about 3-5 minutes, or until the cheese on the bottom starts to melt, then carefully flip it to let the other bread toast and the cheese to melt. Repeat with the rest of the bread, vegetables, and cheese. 
  6. Serve warm.
