• Ingredients:
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and sliced into rounds
  • 1 celery stalk, chopped
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tomatoes, diced
  • ¼ bunch parsley, roughly chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 cups vegetable broth
  • 3 cups water
  • 1 cup shredded cooked skinless chicken breast
  • 1 cup turnip greens (or spinach or kale), roughly chopped
  • salt and black pepper to taste

Soup season is in full swing, which means that there is always a need for more cozy fun soup recipes! 

Here is one for a hearty bowl full of mushrooms, lentils, vegetables, and a bit of shredded chicken that doesn’t require any special ingredients, just what can usually be found lurking in the pantry and fridge, plus that left over chicken from earlier in the week!

DIRECTIONS:

  1. Heat the olive oil in a medium sized soup pot over medium-high heat. Add the onion and garlic to the pot and saute for 2 minutes. Add the carrots and celery and cook for 3-4 minutes. Add the FunGuy mushrooms, tomato, parsley, bay leaf, oregano, basil, and thyme to the pot and let it cook another 4-5 minutes, stirring frequently. 
  2. Pour the broth and water into the pot and stir well. Bring the soup to a boil, reduce the heat to medium-low, place a lid on top and allow it to simmer 20-25 minutes. 
  3. Once the lentils are just tender, add the shredded chicken and turnip greens to the pot and stir well. Let the soup cook an additional 5- 7 minutes. Taste and add salt and black pepper as necessary.
  4. Serve immediately with crusty bread!
