• Ingredients:
  • Water
  • 12oz dried linguine pasta
  • 2 tablespoons olive oil
  • 1 shallot, diced
  • 2 cloves garlic, minced
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 cups whole milk
  • ¼ cup shredded parmesan cheese
  • Salt
  • Fresh ground black pepper
  • 4oz shelled roasted pistachios
  • Shredded parmesan

Simple doesn’t have to mean boring! Take this elegant FunGuy linguine with pistachios for instance. This recipe uses crisp mushrooms smothered in a creamy homemade alfredo sauce to create a pleasant mouth full of texture and flavor while also being topped off with a handful of crunchy pistachios to accent and elevate the entire plate!

In less than 30 minutes and a minimum amount of work, you can have a dish on the table that’s sure to wow family and friends alike. 

Oh, and did we mention it’s easy to pair with your favorite protein? Just whip up a batch of shrimp, a couple of steaks, or some chicken if desired!

DIRECTIONS:

  1. Bring a pot of water to a boil over high heat. Add in the dry linguine and allow to boil for about 8 minutes or until the pasta is cooked through. Once cooked, drain the pasta of excess water. 
  2. While the linguine cooks, prepare the FunGuy mushrooms and Alfredo sauce.
  3. Heat the olive oil in a large sauté pan over medium heat. Add the shallot and the garlic and allow them to cook about 2 minutes. Add the mushrooms and cook them about 5 minutes. Reduce the heat to medium low and let them continue to cook and brown while the liquid cooks out of them and they become more crisp and crunchy; about 5-8 more minutes. 
  4. Turn the heat back up to medium and stir in the milk, letting it come to a simmer. Let the sauce simmer about 7 minutes, or until it has reduced and thickened slightly. Make sure to stir occasionally so it does not burn. Stir in the parmesan cheese and cook 2 minutes longer. 
  5. Transfer the cooked linguine to the pan and toss it well with the sauce to coat everything. Taste and season the mushrooms and pasta with salt and fresh black pepper.
  6. Plate the pasta and mushrooms using tongs. Top each plate with the rest of the mushrooms and Alfredo sauce, pistachios, and a sprinkle of parmesan cheese. 
  7. Serve immediately!
