• Ingredients:
  • water
  • salt
  • 2 cups dry macaroni pasta
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 pound ground beef
  • 2 tablespoons Italian seasoning
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 small head green cabbage, chopped
  • 1 ½ cups beef broth
  • 2 cups canned diced tomatoes
  • 1 cup tomato sauce
  • 2 bay leaves
  • ½ cup shredded aged cheddar cheese

When it comes to a good mid-winter meal there are some absolute necessities: something that will not only satiate any empty belly, but will also warm you from head to toe!

The FunGuy’s version of this classic American style goulash accomplishes that with ease using oodles of macaroni noodles, juicy diced tomatoes, and savory ground beef as always. However, we’ve made our recipe a whole lot more fun with the addition of our favorite sliced mushrooms and a handful, or two, of chopped cabbage for a healthy twist!

DIRECTIONS:

  1. Bring a pot of salted water to a boil over high heat. Add in the dry macaroni and allow to boil for about 8 minutes or until the pasta is cooked through.
  2. While the pasta cooks, prepare the rest of the ingredients. 
  3. Heat the olive oil in a deep pan or soup pot and add the onion; cook 1 minute. Add the garlic to the pot  and cook another minute. Next, add the ground beef and break it up with a wooden spoon. Season the beef with the Italian seasoning and brown the meat, cooking 5-6 minutes, stirring occasionally,. Drain the meat of excess fat and return the pot to the burner. 
  4. Preheat the oven to 375F.
  5. Add the FunGuy mushrooms to the pan and cook about 5 minutes then add the chopped cabbage to the pot and stir well. Let the cabbage cook until tender; about 5-6 minutes, before stirring in the beef broth, diced tomatoes, and the tomato sauce. Add the bay leaves and oregano and stir to combine and allow it to cook 10 minutes, or until it has started to thicken but still has liquid. Stir in the pasta and turn off the heat. 
  6. Transfer the goulash to a casserole dish and top with the shredded cheese and transfer the dish to the oven to bake 7-10 minutes, or until the cheese has melted. 
  7. Remove the dish from the oven and allow it to cool 5 minutes before serving.
