• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tablespoons olive oil, divided
  • 4 cat fish fillets
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon dried oregano
  • ¼ teaspoon ground black pepper
  • 1 pinch salt
  • 2 sprigs thyme, stem removed
  • 2 tablespoons butter
  • 1 lemon

Give catfish, a fish that is too often served battered and fried, the healthy FunGuy update it deserves with this baked version!

A little blackened seasoning lends plenty of flavor to this fish and some butter sauteed sliced mushrooms too. Which, of course, makes it easy to pair with anything from a fresh salad to rice or some delicious hushpuppies for a real southern treat! 

DIRECTIONS:

  1. While the catfish cooks, prepare the mushrooms. 
  2. Heat a saute pan over medium heat. Add the butter and allow it to melt before adding the mushrooms to the pan. Saute the mushrooms for about 5-10 minutes or until they have become lightly browned around the edges. 
  3. Remove the catfish from the oven and add the mushrooms on top before returning them to the oven to finish cooking. 
  4. Preheat oven to 375F. Line a baking sheet with parchment paper. 
  5. Put the FunGuy mushrooms into a bowl and drizzle them with half of the olive oil. Lay the catfish fillets on a cutting board and drizzle the rest of the olive oil on top of each fish fillet. 
  6. In a small bowl, mix the paprika, garlic powder, onion powder, oregano, black pepper, salt, and fresh thyme. Sprinkle half of the mixture over each catfish fillet and add the rest of the spices to the mushrooms. Toss the mushrooms to coat them well with the spices. 
  7. Lay the prepared catfish fillets on the prepared baking sheet and bake them in the oven for 15-20 minutes or until they are firm to the touch and can be easily flaked with a fork. 
  8. When the fish is done,  cut the lemon in half and squeeze the juice over everything before serving.
