• Ingredients:
  • 5.5 oz wheel of Camembert cheese
  • 6-8 fresh figs
  • 1½ tablespoons honey, divided
  • ½ teaspoon coarse salt, divided
  • 8oz package of whole FunGuy white button mushrooms
  • 8oz package of FunGuy oyster mushrooms
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • ¼ cup walnuts
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • crackers and/or crusty bread

Looking for a lovely and simple cours de fromage for a cozy night in for two? Then this French inspired dish is exactly what you’ve been looking for! 

Warm, creamy, and oh so gooey Camembert cheese baked with fresh figs and drizzled with honey makes up the base of this recipe. It’s then topped with buttery sautéed FunGuy mushrooms and toasted walnuts, and served with your choice of crunchy crisp crackers or sliced crusty bread.

DIRECTIONS:

  1. Preheat oven to 300F. Unwrap the Camembert cheese and place it in an oven safe dish. Wash the figs and cut them in half before adding them to the dish with the cheese. Drizzle half of the honey on top and sprinkle with the salt. 
  2. Place the cheese and figs in the oven for 6-8 minutes or until the cheese is soft when touched in the middle. 
  3. While the cheese bakes, prepare the walnuts and mushrooms. 
  4. Brush off any debris from the FunGuy mushrooms with a damp cloth. Trim the stems of the button mushrooms and cut them into quarters. Remove the stems from the rosemary and thyme before roughly chopping them. 
  5. Heat a sauté pan over medium heat without any oil or butter. Add the walnut and toast them in the dry pan, tossing them with a wooden spoon so they don’t burn. Transfer the toasted walnut to a dish and return the pan to the burner. 
  6. Melt the butter with the olive oil in the pan. Add the button and oyster mushrooms, the chopped herbs,  and stir to coat with the oil and butter. Sauté the mushrooms 6-7 minutes or until browned. Add the walnuts to the mushrooms and toss again, season with the salt, and turn off the heat. 
  7. Remove the cheese and figs from the oven and carefully transfer to a serving dish using a spatula. Add the mushrooms and walnuts on top of the warm cheese. Drizzle the remaining honey on top of everything and serve with your favorite crackers or sliced crusty bread!
