• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 cucumbers
  • 1 red onion
  • 4-6 pepperoncini peppers (optional)
  • ½ cup white wine vinegar
  • 1 teaspoon coarse salt
  • 1½ pounds ground turkey breast
  • 1 teaspoon dried paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic salt
  • ½ teaspoon ground black pepper
  • 2 tablespoons olive oil, divided
  • mayonnaise (optional)
  • mustard (optional)
  • ketchup (optional)

It’s officially burger season and the FunGuy has a new blended burger for your next barbecue! 

We’ve taken lean ground turkey, which is notorious for winding up dry and bland, and gave it some life with a bit of good seasoning and blended with our diced mushrooms to make each burger nice and juicy. Topped with quick tangy pickled red onion, fresh crunchy cucumbers, and a hint of heat from pepperoncini peppers and a handful of crisp and browned mushroom slices too!

DIRECTIONS: 

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and mince them on a cutting board. Thinly slice half of the mushroom caps on the cutting board and dice the rest. Separate the sliced mushrooms and reserve to the side, and add the diced mushrooms to the bowl with the stems. aside in a small bowl. 
  2. Peel the onion, slice it on the cutting board, and transfer to a separate mixing bowl. Trim the ends of the cucumber, peel it, and cut into thin rounds before adding to the bowl with the onion.  Remove the stems from the pepperoncini peppers, thinly slice, and transfer to the bowl with the onion and cucumber. Add the vinegar and coarse salt to the bowl and toss well. Cover and refrigerate at least 30 minutes or overnight. 
  3. Place the ground turkey in a bowl with the diced mushrooms and season with paprika, oregano, garlic salt, and black pepper. Using your hands, mix the turkey and mushrooms well to evenly distribute the seasoning. Divide the mixture into 6 even sized portions and roll each into a ball before flattening them down into burger patties. 
  4. Add half of the olive oil to a cast iron pan with a paper towel, before placing it on a stove top over medium high heat. Once the pan is hot, lay the patties on to the pan and allow them to cook 6-8 minutes on each side or until no longer pink in the middle. Transfer the patties to a plate and allow them to rest a couple of minutes before assembling the burgers. 
  5. While the burgers rest, prepare the sliced mushrooms by adding the rest of the olive oil to the pan and add the sliced mushrooms to the pan. Brown the mushrooms, stirring frequently,  6-7 minutes, or until browned and crisp.
  6. To assemble the burgers, spread the mayonnaise on the inside of the burger buns followed by the mustard and ketchup if desired. Place a turkey burger patty on the bottom slice of bread, then the pickled cucumbers and onions, mushroom slices and finish with the top of the bun.
  7. Serve immediately!
