• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 4-5 medium red potatoes
  • 1 onion
  • 4 cloves garlic
  • ½ red bell pepper
  • ½ orange bell pepper
  • ½ yellow bell pepper
  • 4-6 tablespoons olive oil, divided
  • 1 tablespoon Cajun spice mix, divided
  • coarse salt
  • 2 14oz rib eye steaks
  • flat leaf parsley (optional)

A good steak doesn’t need to be a rare medium well done, but this recipe for Cajun spiced rib eye and FunGuy mushrooms will have your mouth watering!

Cast iron is the best way to go with this steak, but a good pan that can achieve a good sear to seal in the juices while giving a deliciously flavorful crust is all that is necessary. That sear also contributes  flavor from juice and rendered fat to the spiced mushrooms, potatoes, and slices of sweet peppers.  

This is absolutely a steak dinner sure to win over all of the FunGuy carnivores!

DIRECTIONS:

  1. Brush off any debris from the FunGuy mushrooms with a damp cloth and trim the stems and transfer to a large bowl. Wash the potatoes well and cut them into ½ inch thick cubes. Peel the onion and garlic before thinly slicing. Thinly slice the bell pepper halves.  
  2. Lay the steaks on a clean cutting board and drizzle each side with 1-2 tablespoons of the olive oil and season with the Cajun spice and a pinch of coarse salt on each side, patting the spice and oil into the meat. 
  3. Bring a pot of water to a boil over high heat. Carefully add the potato cubes to the pot and allow them to boil for 6-7 minutes or until just tender. Drain the potatoes in a colander in the sink. Transfer the potatoes to the bowl with the mushrooms and add 1-2 tablespoons of the olive oil, the rest of the cajun spice mix, and a pinch of coarse salt. Toss well. 
  4. Heat a cast iron skillet over high heat. Add 1 tablespoon of olive oil to the pan and add the onion and garlic, sauteing for 1 minute. Move the onion and garlic to the side to make room for the steaks. 
  5. Lay the steak in a single layer in the hot skillet, working one at a time if necessary. Allow it to sear 2 minutes on each side. After the initial sear add the peppers around the steak and mix them with the onions. Continue to cook the steaks, flipping them every minute for 8-10 minutes or until a thermometer reads 130F for medium-rare. Cook longer for more done, and less for a rarer steak. Transfer the cooked steak to a clean cutting board to rest with aluminum foil tented over it for at least 10 minutes. 
  6. While the steaks rest finish the potatoes and mushrooms.
  7. Add the last tablespoon of olive oil to the skillet and add the potatoes and mushrooms to the pan, stirring them with the onions and peppers.  Lower the temperature to medium and continue to cook the potatoes until they have crisped on the outside and the mushrooms have become tender. Turn off the heat.
  8. Serve the steaks immediately along with the mushrooms, potatoes, peppers, and parsley if desired!
