• Ingredients:
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon coarse salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon dried thyme
  • ¼ teaspoon oregano
  • ¼ teaspoon onion powder
  • 4 tablespoons olive oil, divided
  • 8oz package of sliced FunGuy white button mushrooms
  • 4 4 ounce steaks
  • 4 eggs

Stay up late having way too much fun on Friday night? Feeling a bit peckish and looking to have a late weekend breakfast that can easily be pushed back to lunch? Then look no further!

The FunGuy has just the recipe with this Cajun spiced steak, eggs, and FunGuy mushrooms. It requires a single pan to make, and can be grilled up in less than a half hour.

Just another great way to start a fun day!

DIRECTIONS:

  1. In a bowl, whisk together the garlic powder, paprika, salt, black pepper, cayenne pepper, thyme, oregano and onion powder. Put the FunGuy mushrooms into a bowl and drizzle with about a tablespoon of olive oil and lay the steaks out on a cutting board. Sprinkle the seasoning on either side of the steaks and over the mushrooms. Toss the mushrooms so they are well coated. 
  2. Add half of the left over olive oil into a skillet and place it on the stove top over high heat. Once the pan is very hot add the steaks to it and allow them to sear 2 minutes on each side. Continue to cook and flip every minute for 7-8 minutes or until a thermometer reads 130F for medium-rare. Cook longer for more done, and less for a rarer steak. Transfer the cooked steak to a cutting board and tent aluminum foil on top and allow it to rest while cooking the mushrooms. 
  3. Add the mushrooms to the hot pan and allow them to cook 4-5 minutes, or until nicely browned. Transfer the cooked mushrooms to a plate and cover to keep them warm. Wipe out the skillet with a paper towel and return it to the stove top. 
  4. Heat the rest of the oil in the skillet and reduce the heat to medium low. Crack the eggs into the pan carefully. Let them cook 2-5 minutes or until the white is firm and no longer wet and the edges are lightly crisped. Gently flip the egg over, turn off the heat, and allow the top of the egg cook with the residual heat of the pan for about 1 minute. 
  5. Plate the steaks with the mushrooms and an egg on top of each and serve immediately.
