• Ingredients:
  • 2 10oz packages of FunGuy Mushroom Stuffers
  • 1 small green bell pepper
  • 1 small red bell pepper
  • 1/3 cup shredded cheddar cheese
  • 1/3 cup cream cheese
  • ½ teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon dried parsley flakes
  • ½ teaspoon garlic salt
  • ½ teaspoon black pepper

While the filling for these is quite simple with diced sweet peppers, a mix of fragrant herbs, creamy cream cheese, and sharp cheddar, the flavors are perfect for both big summer time soirees and small cookouts alike! 

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth. Pop out the stem using your thumb and discard. Transfer the mushroom caps to the baking sheet hole side up. Remove the stems and seeds from the bell peppers and dice on a cutting board. 
  3. In a bowl mix together the diced peppers, all but a tablespoon of the cheddar cheese, cream cheese, oregano, basil, parsley, garlic salt, and black pepper until creamy and smooth. Spoon the filling into each mushroom cap and sprinkle with the reserved cheddar cheese on top of each. 
  4. Bake the mushrooms in the oven for 15-17 minutes or until the cheese has browned on top and the mushrooms are cooked. 
  5. Remove the mushrooms from the oven and allow to cool 5 minutes before serving.
