- Ingredients:
- Water
- 8oz dry spaghetti pasta
- pinch of salt
- 8oz package of FunGuy crimini mushrooms
- 2 pints of cherry tomatoes
- 4 garlic cloves
- fresh basil leaves
- 3-4 tablespoons olive oil
- coarse salt
- black pepper
Don’t let any of those juicy summer cherry tomatoes and fresh basil go to waste now that it’s fall! Twirl them up with a plateful of spaghetti and our crimini mushrooms instead!
Quick, healthy, and fresh this recipe is perfect for the last of summer’s bounty. So much flavor in every bite that no one will care that it’s vegan too!
DIRECTIONS:
- Bring a pot of lightly salted water to a boil over high heat. Add the spaghetti to the pot and let it cook 7-9 minutes, or until tender. Drain the pasta of excess water, reserving approximately one ladle full of pasta water for the tomatoes and mushrooms.
- While the pasta cooks, prepare the rest of the ingredients.
- Brush off any debris from the FunGuy crimini mushrooms with a damp cloth and trim the stems. Slice the mushrooms and set aside. Rinse the cherry tomatoes under cool water and let them drain in a colander. Crush the garlic cloves, remove the skins, and trim off the tough end. Rinse the basil leaves under cool water to remove any debris, shake off excess water and pat dry with paper towels before roughly chopping them.
- Heat the olive oil in a deep pan over medium heat. Add the garlic cloves and allow them to cook until golden brown, carefully turning them so they do not burn. Add the sliced crimini mushrooms to the pan and allow them to cook 4-5 minutes, or until they start to brown around the edges. Last, add the cherry tomatoes to the pan, spreading them out in a single layer.
- Allow the mushrooms and tomatoes to cook together until the tomatoes start to burst open; about 5-6 minutes. Add the reserved ladle of pasta water to the pan and stir well. Let it come to a simmer, reduce the heat to medium-low, and let it cook another 7-8 minutes, or until the liquid from the tomatoes and pasta water has reduced and thickened a bit. Taste and season with salt and black pepper.
- Add the spaghetti to the pan and stir it into the mushrooms and tomatoes, making sure the liquid in the pan coats the pasta. Turn off the heat, taste and adjust the seasoning as necessary. Add the basil leaves.
- Allow the pasta, crimini mushrooms, and cherry tomato spaghetti to cool about 5 minutes before serving.
