• Ingredients:
  • ½ cup warm water
  • 1 envelope yeast
  • ¾ cup room temperature water
  • 2 cups all purpose flour, plus some for dusting
  • pinch of salt
  • 3 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 tomato, diced
  • 1 tablespoon flour
  • 1 teaspoon dried oregano
  • 1 cup milk
  • ½ teaspoon coarse salt
  • ½ cup shredded mozzarella
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 chorizo sausage
  • 1 grilled chicken breast, sliced into strips
  • fresh oregano leaves

The chilly season is officially upon us which means it’s time to get into the kitchen to make delicious FunGuy filled comfort food! 

This warm homemade crust pizza topped with earthy sliced FunGuy mushrooms, strips of grilled chicken, and dotted with intensely flavored Portuguese chourico or Spanish chorizo sausage is just the comfort food that needs to be introduced to your kitchen.

We highly recommend adding this pizza to the traditional pizza night rotation! 

DIRECTIONS:

  1. Proof the yeast in the ½ cup warm water by sprinkling it over the surface of the water and allowing it to sit for 5 minutes. It will be foamy. 
  2. Put half of the flour and salt into a bowl and stir it together with a whisk. Pour the room temperature water and 1/2 tablespoon olive oil into the flour and stir together with a wooden spoon. Once the yeast is foamy, add that to the flour and water mixture and stir to combine. Add in the rest of the flour and stir until a sticky ball forms. 
  3. Turn the dough out onto a well floured surface and knead 5-7 minutes or until a smooth, soft ball has formed. Add another ½ tablespoon of olive oil to a clean bowl and place the dough ball inside the bowl, turning it over in the oil to coat the outside. Cover the bowl with a warm damp cloth and let the dough rise for about 30 minutes. 
  4. While the dough rises, prepare the white tomato sauce. 
  5. Heat the rest of the olive oil in a sauce pan over medium high heat. Add the garlic and saute for 2 minutes. Add in the tomato and oregano and cook another minute or two. Sprinkle the flour over the pan and stir it in with a whisk until a paste like texture has formed. Pour in the milk, stirring constantly as you add it. Allow the sauce to cook, stirring frequently, for about 5-7 minutes or until it’s become thick and creamy. If it is too thick, add more milk a couple tablespoons at a time until it reaches the desired consistency. Turn off the heat. 
  6. Preheat oven to 450F. Line 1 or 2 baking sheets with parchment paper.
  7. When the dough is ready, divide it into 2 equal sized pieces for a medium pizza or leave whole for a large pizza. Roll the dough into a ball again and let it rest another 10 minutes with the damp cloth on top. 
  8. Using your hands, pat the dough ball into round disks. With finger tips, gently pull and push the dough from the middle outward to the edges to create a thicker crust and thinner middle. Transfer each pizza to the baking sheets. 
  9. Spread the white sauce over the middle of the dough, working outwards to make an even layer. Add the sliced FunGuy mushrooms, chicken strips, and chorizo to the top of the pizza and sprinkle the shredded mozzarella on top. 
  10. Bake the pizzas in the oven 7-10 minutes or until the crust has risen and has become golden brown.
  11. Remove the pizzas from the oven and allow them to cool about 5 minutes before slicing and serving. 
  12. Note: If you cannot find Portuguese chourico, substitute Spanish chorizo, or another cured sausage. Do not use raw Mexican chorizo, it’s not the same and usually requires cooking first!
