• Ingredients:
  • 4 tablespoon olive oil, divided
  • 6 whole garlic cloves, peeled
  • 3 tablespoons mascarpone cheese
  • 1 tablespoon minced fresh basil
  • 1 teaspoon coarse salt, divided
  • 1 lemon, juiced
  • 8oz package of sliced FunGuy white button mushrooms
  • ½ cup bread crumbs
  • 1 teaspoon Italian seasoning
  • 8 thinly sliced chicken cutlets
  • 2 Italian tomatoes, sliced
  • 8 mini burger buns

What did the chicken sandwich say to the summer tomatoes? We got mushroom for you in here! 

All jokes aside, these FunGuy chicken sliders are the perfect addition to any summer soiree with fresh sliced garden tomatoes, sautéed mushrooms, and finished off with a creamy mascarpone cheese mixed with caramelized garlic and fragrant basil. 

This is a recipe to double up on to make sure everyone gets their fill!

DIRECTIONS:

  1. Heat 1 tablespoon of the olive oil in a sauté pan over medium high heat. Add the garlic cloves and let them cook 3-4 minutes on one side. Turn them over and cook an additional 2-3 minutes on the other side. Transfer the garlic to a cutting board and mince well before putting into a bowl with the mascarpone cheese, basil, and 1/3 of the coarse salt. Mix well and add in the lemon juice, mixing again until smooth and creamy. Cover and set aside. 
  2. Add another tablespoon of olive oil to the pan and add the FunGuy mushrooms, letting them cook 4-5 minutes or until tender and just browned. Transfer the cooked mushrooms to a bowl and cover to keep warm. 
  3. Mix the bread crumbs, Italian seasoning, and another third of the coarse salt together in a shallow dish. Dredge the chicken cutlets, making sure the chicken slices are approximately the same size as the burger buns, in the bread crumbs and transfer them to a clean plate. 
  4. Heat the remaining olive oil in the sauté pan over medium high heat and add the chicken cutlets to the pan 4 at a time. Cook the chicken 4-5 minutes on each side, or until cooked through and browned and crunchy on the outside. Turn off the heat and transfer the chicken to a clean plate lined with paper towels to remove excess oil. 
  5. To assemble the sliders spread the garlic mascarpone cheese on both the top and bottom sides of the mini burger buns and layer the chicken cutlets, a slice of tomato with a sprinkle of salt if desired, and top with the sliced mushrooms before finishing with the top bun. Repeat with the rest of the sliders. 
  6. Serve immediately!
