• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 boneless skinless chicken breast, sliced into thin strips
  • 4 tablespoons olive oil, divided
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon ground coriander seed
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • 4 cloves garlic, minced
  • 4 small pita breads
  • 4 tablespoons tzatziki
  • 4-8 lettuce leaves
  • 1 large tomato, sliced
  • 1 red onion, sliced
  • 4-8 pickled peperoncini peppers, sliced
  • Feta cheese

Try something a little different this week and become the gyro of the kitchen with these FunGuy chicken and mushroom gyros! 

Just season up a bit of chicken and whole lot of FunGuy mushrooms, cook and slap them on some warm pitas with fresh veggies and you’re good to go. Making a double dose is highly recommended for leftovers or just extras for hungry tummies.

DIRECTIONS:

  1. Preheat the oven to 375F. 
  2. Place the FunGuy mushrooms into a bowl and add 1 tablespoon of olive oil to it, tossing well to coat the mushrooms. Put the chicken into another bowl and add another tablespoon of olive oil and toss to coat. In another small bowl, whisk together oregano, thyme, basil, salt, parsley, coriander seed, cumin, paprika, and mince garlic. Sprinkle half of the spice mix over the mushrooms and half over the chicken, tossing each separately to coat the mushrooms and chicken. 
  3. Heat a sauté pan with the remaining olive oil over medium high heat. Once the oil is hot add the mushrooms to the pan and cook 3-4 minutes, stirring frequently. Push the mushrooms to the side and add in the chicken and sauté 3-4 minutes before mixing them with the mushrooms on the side, then cook another 3-4 minutes or until the chicken is cooked through and browned. Remove the pan from the heat. 
  4. Sprinkle the pitas with water and place them on a baking sheet and into the oven to warm them for about 3 minutes. This should make them soft and pliable. Remove the pitas from the oven. 
  5. To assemble the gyros lay a pita on a plate and spread tzatziki sauce on one side. Layer lettuce, chicken and mushrooms, tomato, red onion, peperoncini pepper slices, and top with feta cheese crumbled on top. 
  6. Serve immediately!
