• Ingredients:
  • 8oz package of FunGuy crimini mushrooms
  • 4 medium sized zucchini
  • 1 onion
  • ½ red bell pepper
  • ½ cup corn kernels
  • 1 cup canned black beans, rinsed well
  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon chili powder
  • ½ teaspoon salt
  • 1 lime
  • ½ cup shredded cheese (optional)
  • fresh cilantro (optional)

Don’t let the zucchini completely take over this summer’s garden. Instead, harvest those wonderfully abundant squash and turn them into these delicious and healthy stuffed zucchini boats!

The flavors of summer are brought together with a mixture of chopped ripe red bell peppers and sweet corn kernels, hearty black beans, and thinly sliced crimini mushrooms and stuffed into garden fresh zucchini.

It’s the perfect recipe for a healthy plant based dish that is good all summer long!

  1. DIRECTIONS:
    Preheat oven to 350F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy crimini mushrooms with a damp cloth, trim the stems, and thinly slice. Peel and dice the onion and dice the bell pepper. Transfer everything to a mixing bowl and set aside. Wash the zucchini well and trim both ends and cut them down the middle lengthwise. Lay the zucchini on a lined baking sheet with the cut side up and scoop out the seeds with a spoon.
  3. Add the corn, black beans, paprika, oregano, chili powder, and salt to the mushroom and bean mixture and mix well, taste and season with more salt if necessary. Spoon the mushroom mixture into the zucchini halves and sprinkle the tops with the cheese.
  4. Bake the filled zucchini boats in the oven for 20-25 minutes or until the zucchini is tender and the cheese has melted.
  5. Remove the cooked zucchini boats from the oven, cut the lime in half and squeeze the juice over each boat while hot and let them cool at least 5 minutes before serving with fresh cilantro leaves.
