• Ingredients:
  • 3oz tilapia fillets, boneless skinless
  • 3oz salmon fillets, boneless skinless
  • 4 green onions, chopped and divided
  • ½ teaspoon salt
  • 1 egg white
  • 1 lemon, zested and juiced
  • 5 tablespoons plain Greek yogurt
  • 3 tablespoon ketchup
  • 2 tablespoons chopped fresh parsley
  • salt
  • 2-3 tablespoons olive oil, divided
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 medium red onion, thinly sliced
  • 1½ cups arugula

Let the FunGuy school you this week with a new burger; a fintastic fish burger in fact! 

A blend of flavorful salmon and hardy tilapia come together in these fish patties to make a satisfying burger, served with our sautéed mushrooms and peppery arugula. We’ve included a tangy creamy homemade sauce to slather on the toasted bun to finish it off with a zesty kick! 

DIRECTIONS:

  1. In a blender or food processor, add the tilapia, salmon, half of the green onions, salt, egg white, and lemon zest. Pulse until everything is evenly minced. Transfer to a bowl, mix in the remaining chopped green onions, mix well and form 4 round patties. Refrigerate for 15-30 minutes. 
  2. While the fish patties chill, make the burger sauce. 
  3. Mix the lemon juice, Greek yogurt, ketchup, and parsley together in a bowl. Taste and add salt to taste. Cover and refrigerate until ready to use. 
  4. Heat half of the olive oil in a large sauté pan or skillet over medium high heat. Add the fish burger patties to the pan in a single layer and cook each side 3-5 minutes or until the patties are cooked through and lightly browned. Transfer the cooked patties to a plate and cover with tented aluminum foil to keep warm. 
  5. Add the remaining oil to the pan and add the FunGuy mushrooms to the pan. Sauté the mushrooms 4-6 minutes, or until browned. Sprinkle with a pinch of salt and transfer to a bowl and cover to keep warm. 
  6. Place the buns, cut side down in the pan to lightly toast for 1-2 minutes. Turn off the heat. 
  7. To assemble the fish burgers, spread the sauce on each burger bun and layer with the fish patty, sliced red onion, arugula, sautéed mushrooms, and finish with the top burger bun!
