• Ingredients:
  • 1 ½ cups brown rice
  • 2 cups water
  • 1 cup vegetable stock
  • 2 tablespoons canola oil, divided
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 carrot, peeled and diced
  • 2 teaspoons ground ginger
  • 2 eggs, beaten
  • 2 tablespoons sesame oil, divided
  • 1 cup frozen peas
  • 1 tablespoons rice wine vinegar
  • Soy sauce

Wok your way into the kitchen and get some cooking on with this healthy fried brown rice!

This dish will become a FunGuy recipe basic that can easily be changed to a more vegan or omnivorous version with the removal of the eggs or adding a bit of meat. Did we mention it’s also perfect for that left over rice that is just taking up space in the refrigerator? Yes, it does that too!

DIRECTIONS:

  1. Rinse the rinse under cold running water and drain. Put the rice into a pot with the water and vegetable stock. Place it on the stove over high heat and bring to a boil. Once boiling, cover and reduce the heat to low and allow it to simmer for about 45 minutes or until the water has evaporated.
  2. Once the rice has cooked, turn it out onto a baking sheet and spread it out to cool. Flip the rice occasionally with a spatula to help it cool.
  3. Heat half of the canola oil in a large wok over medium high heat. Add in the onion, garlic, carrot, and ginger and sauté for 2 minutes. Add in the mushrooms and half of the sesame oil and cook 4-6 minutes or until the mushrooms are tender. Transfer the cooked mushrooms to a bowl and set aside.
  4. Add the egg to the wok and reduce the heat to medium low. With a spatula, stir it slowly as it cooks to scramble it for about 3 minutes. Transfer the cooked egg to a bowl and set aside.
  5. Add the other half of the canola oil to the wok and turn the heat up to medium. Add in the rice and let it cook, constantly stirring to keep it from sticking, for 2-4 minutes. Add in the peas, mushrooms, and egg to the wok and stir to evenly distribute it throughout the rice. Lastly add the vinegar and the rest of the sesame oil to the rice and stir again to combine. Turn off the heat. Season with soy sauce as desired.
  6. Serve immediately.
