• Ingredients:
  • 1 large cucumber, sliced
  • 2-3 green onions, sliced
  • ¼ cup rice vinegar
  • 1 tablespoon soy sauce
  • 2 teaspoons sugar
  • ½ teaspoon sesame seeds
  • 1 loaf rustic bread
  • 8oz package FunGuy crimini mushrooms
  • 4 tablespoons oil. divided
  • 4 eggs
  • 1 cup kimchi
  • ½ cup cream cheese, room temperature
  • 1-2 teaspoons sriracha

Looking for an eggcellent sandwich with a punch of fierce spicy flavor? Then look no further than this new FunGuy sandwich!

Kimchi is the inspirational ingredient for this sandwich with it’s intense heat and sour flavors combined with our sautéed sliced mushrooms, savory fried eggs, and cool slices of quick marinated cucumbers on a loaf of toasted rustic bread. We added a healthy dollop of creamy sriracha spread on each side to complete this eggceptional sandwich!

DIRECTIONS:

  1. Place the cucumber slices in a bowl with the green onions, rice vinegar, soy sauce, sugar, and sesame seeds. Toss well to coat the cucumbers and set aside to marinate. 
  2. Preheat oven to 350F. Line a baking sheet with parchment paper. Cut the loaf of bread in half so there is a top and bottom. Lay it on the baking sheet with the cut side up and place in the oven to toast about 5 minutes or until lightly brown. Turn off the heat and leave in the oven to keep warm until ready to assemble the sandwiches. 
  3. Heat half of the olive oil in a pan over medium high heat. Add the FunGuy crimini mushrooms and allow them to cook 2-3 minutes. Transfer the cooked mushrooms to a dish and cover to keep warm. 
  4. Add the remaining oil to the pan and reduce the heat to medium-low, and crack the eggs into it. Let them cook 2-5 minutes or until the white is firm and no longer wet and the edges are lightly crisped. Gently flip the egg over, turn off the heat, and allow the top of the egg cook with the residual heat of the pan for about 1 minute. Transfer the eggs to a plate and also cover to keep warm. 
  5. In small bowl, mix the soft cream cheese and sriracha together until it’s a light reddish orange color and smooth and creamy. 
  6. To assemble the sandwiches, lay the bread out on a cutting board cut side up. Spread the sriracha cream cheese on each slice of bread. Layer the cucumber slices on the top slice and on the other layer the kimchi, eggs, and mushrooms on top. Pour any left over juices over the mushrooms and eggs if desired before closing the sandwich with the top slice of bread. Cut the sandwich loaf into 4 even pieces and serve!
