• Ingredients:
  • ¼ cup natural yogurt
  • 1 teaspoon lemon juice
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 tablespoons olive oil
  • 1 onion, sliced
  • 1 green bell pepper, sliced
  • Pinch of salt
  • 4 leafs red lettuce, washed
  • 4 sandwich buns

Know what the best part of grilling season is? Finding new ways to stuff FunGuy Mushrooms into every meal! Not just on burgers or kebabs or even as dip, but something like a great sandwich with a creamy, yet healthy and fresh lemon yogurt sauce that makes it all that more exciting to the tongue.

DIRECTIONS:

  1. In a small bowl, whisk together yogurt, lemon juice, salt and black pepper. Cover and set aside.
  2. Lightly oil a grill pan with the olive oil and place over high heat. Place FunGuy mushrooms in the pan and cook 3 minutes. Add the onions and bell peppers to the mushrooms and allow to cook until tender, turning frequently so they don’t burn. Remove the mushroom, onions and bell peppers once they have grill marks and are tender. Season with a pinch of salt.
  3. Open each sandwich bun and spread yogurt sauce on each side. Place ¼ of the mushrooms mixture on the bottom slice of bread and top with lettuce and the other slice of bread.
  4. Serve immediately.

If you want to make this on an outdoor grill, use a grill grate that has small squares so none of that mushroom, onion, pepper goodness can fall out!
