• Ingredients:
  • 2 sheets puff pastry
  • 8oz package of sliced FunGuy white button mushrooms
  • 8 ounces smoked ham, diced
  • 1 shallot, minced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk
  • 1 teaspoon dried parsley flakes
  • ½ teaspoon salt
  • ½ teaspoon nutmeg
  • ½ teaspoon black pepper
  • 1 cup shredded Gruyere cheese

Spring into brunch season with something perfect for any lazy weekend morning! 

In this recipe we’ve taken flakey golden brown puff pastry squares and filled them with smokey ham, earthy mushrooms, and a homemade bechamel sauce loaded up with the salty nuttiness of gruyere cheese. The best part is that these can easily be prepped the night before so the pastries can be filled and popped into the oven in less than 5 minutes the next morning!

DIRECTIONS:

  1. Preheat oven to 375F. Line a baking sheet with parchment paper. Lay the puff pastry sheets on a cutting board and cut them into 4 inch squares and transfer them to the baking sheet with a little room between each. Refrigerate until ready to fill and bake. 
  2. Lay the FunGuy mushrooms on a cutting board and reserve enough sliced mushrooms to have to place on full slice on each pastry and roughly chop the rest. Transfer the chopped mushrooms and diced ham to a bowl and set aside. 
  3. Melt the butter in a sauté pan over medium heat. Add the shallots and cook 3-4 minutes, stirring frequently. Sprinkle the flour over the pan and stir it into the butter and shallot with a spoon, letting the flour absorb the butter. Let it cook, stirring continuously, 1-2 minutes or until it’s become a thick paste. Stir in the milk about 3-4 tablespoons at a time so it thins the roux paste but doesn’t create lumps. 
  4. Once all of the milk has been added, stir in the parsley flakes, salt, nutmeg, and black pepper. Add the cheese and stir until it has melted. Reduce the heat and let the mixture simmer until it’s become thick and creamy. Turn off the heat and pour the mixture into the bowl with the mushrooms and ham and stir well. Taste and adjust the seasoning if needed. Use right away or cover and refrigerate to use the next day. 
  5. Spoon the mushroom, ham, and cheese mixture into the middle and place a mushroom slice on top of each pastry. Fold the corners up towards the center to close the pastry.
  6. Place the pastries into the oven to bake for 16-20 minutes, or until puffed up and golden brown. Let cool 5 minutes before serving.
