• Ingredients:
  • flour
  • 2 sheets of puff pastry, refrigerated
  • 1 egg, beaten
  • 1 tablespoon water
  • 8oz package of sliced FunGuy white button mushrooms
  • 6 ounces deli ham
  • 6 ounces shredded sharp cheddar cheese

Ham and cheese are one of the best pairings for a comfort food combo, but we like to stuff in some extra fun with our sliced FunGuy button mushrooms! 

These cheesy ham and mushroom filled puff pastry pockets make for a good breakfast, snack, or to go with a hot bowl of soup or next to a fresh garden salad! 

DIRECTIONS:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Dust a clean work surface with flour and roll or unfold the puff pastry onto the floured surface. Using a knife, cut each sheet into 6 even sized pieces. There will be 12 pieces all together. Whisk the egg and water together to create an egg wash and set it aside. 
  3. Layer a little cheese on top of each of 6 pastry pieces, then add a slice of ham, sliced FunGuy mushrooms, and add more cheese on top of the mushrooms. Brush the edges of the pastry with the egg wash and top with one of the other pastry pieces and seal by pressing down around the edges. Repeat with the remaining pastry, cheese, ham, and mushrooms and transfer the pastries to the prepared baking sheet. Finish by brushing the tops of each pastry with the remaining egg wash, and add slices either the sides of the pastry or on top to allow for steam to escape. 
  4. Transfer the baking sheet to the oven and allow them to cook 18-25 minutes, or until the pastry pockets have puffed up and turned golden brown.
  5. Remove the cooked pastry pockets from the oven and allow them to cool at least 5-10 minutes before serving. 
  6. Note: These can be assembled and baked before hand and easily reheated in the oven for about 5 to 10 minutes at a 250F.
