• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • ¼ cup vinegar
  • 2 tablespoons olive oil
  • ¼ teaspoon coarse salt
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried basil
  • 1 tomato
  • 2-4 large red lettuce leaves
  • 4 oz mascarpone cheese
  • 6-8 basil leaves
  • 4 large tortillas
  • 3oz thinly sliced pepperoni
  • 3 oz thinly sliced salami
  • coarse salt
  • fresh ground black pepper

With this heat no one wants to turn on the stove top! So why not roll into the kitchen with this no-cook FunGuy recipe!

These Italian pinwheel style sandwiches are comprised of quick marinated FunGuy sliced mushrooms,   tomato cut paper thin, crunchy lettuce leave, deli meats, a hint of fresh basil, and rolled up in tortillas spread with creamy mascarpone. 

It’s everything needed for a simple and delicious summer meal and perfect finger food for your next backyard get together!

DIRECTIONS:

  1. Put the FunGuy mushrooms in a bowl and add the vinegar, olive oil, salt, oregano, and basil. Toss the mushrooms in the mixture and set aside to marinate at least 10 minutes.  
  2. Thoroughly wash the tomato, lettuce, and basil leaves and shake off excess water. Cut the tomato into paper thin slices, cut the lettuce into 2-inch wide strips, and stack the basil leaves before slicing them into thin ribbons. In a bowl, stir the mascarpone cheese well with a fork until smooth and easy to spread. 
  3. To assemble the pinwheels start by laying a tortilla out and spread a thin even layer over it, leaving about a ¼ inch clean around the edge on one side. Working from the side covered to the edge with the cheese lay 2 pieces of lettuce in a line followed by a line of marinated mushrooms, pepperoni, tomato, mushrooms again, and finish with salami making sure to leave about ¼ inch of tortilla clear from the edge. Sprinkle the basil sparingly across the tortilla. 
  4. Starting from the lettuce side, roll the tortilla up in a tight roll. Trim the ends with a sharp knife and make 1½ inch thick cuts along the length of the rolled up tortilla. Transfer the finished pinwheels to a serving plate cut side up. Repeat with the rest of the tortillas and filling. 
  5. Serve immediately or cover and refrigerate until ready to use. These can easily be made a few hours before hand and chilled!
