- Ingredients:
- 8oz package of sliced FunGuy white button mushrooms
- 1 tablespoon olive oil
- 2 tablespoons fajita or taco seasoning, divided
- pinch of salt
- 32 ounces frozen tater tots
- 1½ cups shredded cheddar cheese
- ¼ cup sour cream
- ¼ cup guacamole
- 1 tomato, diced
- 2 green onions, chopped
- 2 tablespoons pickled sliced jalapeños
- 2 tablespoons sliced black olives
Looking for a fun family style weekend snack! Well the FunGuy has just the thing with some loaded up mushroom and tater tot “nachos”!
Melted cheese over golden brown sliced FunGuy mushrooms and crispy crunchy tater tots, topped with all of the extras included like: onions, diced tomato, olives, guacamole, black olives, and a dollop of sour cream on top!
This is a recipe that is an easy, tasty and quick to get in the oven dish that every FunGuy from kids to adults will enjoy!
DIRECTIONS:
- Preheat oven to 400F. Line a baking sheet with parchment paper.
- Transfer the FunGuy mushrooms to a mixing bowl and add in the olive oil, half of the fajita or taco seasoning, and salt and toss well to coat the outside the mushrooms. Transfer the tater tots to the baking sheet in a single layer and sprinkle the remaining seasoning over them. Add the mushrooms to the tater tots and mix them among them to make as even a layer as possible.
- Bake the mushrooms and tater tots in the oven for 25-30 minutes, turn them half way through cooking. They are ready when the tater tots are golden brown and crisp and the mushrooms are too.
- Remove the baking sheet from the oven and sprinkle 3/4ths of the shredded cheese over the mushrooms and tots. Turn the broiler on in the oven and place the tots and mushrooms back into the oven for about 3-5 minutes or until the cheese has melted.
- Transfer the cooked mushrooms and tater tots to a serving plate and top with sour cream, guacamole, the diced tomato, green onions, pickled jalapeños, and black olives.
- Serve immediately!
