• Ingredients:
  • Water
  • pinch of salt
  • 8oz dry tagliatelle pasta
  • 2 tablespoons sesame oil
  • 8oz package of sliced FunGuy white button mushrooms
  • 2 garlic cloves, minced
  • 3 tablespoons unsalted butter
  • 1 tablespoon yellow miso paste
  • 1 teaspoon light soy sauce (optional)
  • green onions, chopped

Classic Italian pasta meets Japanese flavors in this week’s FunGuy recipe! 

We’ve combined miso with butter to make a quick umami packed sauce to mix with sautéed mushrooms before being tossed with thick strands of tagliatelle pasta. 

This dish is so easy and tasty, it’s sure to become a weekday favorite!

DIRECTIONS:

  1. Bring a pot of water and the salt to a boil over high heat. Add the tagliatelle to the pot and let it cook 7-9 minutes, or until tender. Reserve a ladle of the pasta water and drain the pasta of any excess. 
  2. Heat the sesame oil in a large sauté pan over medium heat. Add the garlic and let it cook 1 minute. Add the FunGuy mushrooms and sauté 3-4 minutes or until lightly browned.  Add the butter to the pan and let it melt. Next, stir in the miso paste, and add a little of the reserved pasta water to the pan and stir again to thin the sauce. Taste and season with the soy sauce if needed. 
  3. Transfer the tagliatelle pasta to the pan and toss well to coat and evenly distribute the mushrooms throughout. 
  4. Top the miso butter pasta and mushrooms with the green onions and serve immediately.
