• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 2 medium onions
  • 2 cloves garlic
  • 1 pound ground beef
  • 1 teaspoon coarse salt
  • 1 teaspoon black pepper
  • 4 tablespoons mayonnaise
  • 2 tablespoon ketchup
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon mustard
  • 6-8 tablespoons butter, softened
  • 4 slices Swiss cheese
  • 4 slices Gouda cheese
  • 8 slices of rye bread

What do you get when you cross a juicy blended FunGuy burger and a grilled cheese sandwich? FunGuy mushroom patty melts!

Our recipe for this classic American diner sandwich includes our juicy mushroom and ground beef blended patties, topped with loads of caramelized onions and mushrooms, and served on butter toasted rye bread and slices of melted Swiss and Gouda cheeses.

DIRECTIONS:

  1. With a damp paper towel, gently clean each FunGuy mushroom of any debris and trim the stems. Pop out the stems and finely mince them on a cutting board and transfer to mixing bowl. Slice the mushroom caps thinly and set aside. Peel and thinly slice the onion and mince the garlic. 
  2. Add the ground beef, salt, and black pepper to the bowl with the minced mushroom caps. Mix well to combine. Divide the mushroom and meat mixture into 4 even sized balls before shaping them with your fingers into round 1/8-1/4 inch thick patties, place them on a large dish and cover with plastic wrap. Refrigerate for at least 15 minutes and up to a couple of hours before cooking.
  3. In a small bowl mix the mayonnaise, ketchup, Worcestershire sauce, and mustard together. Taste and adjust as necessary. Cover and set aside or refrigerate until ready to use.
  4. Heat the oil in a cast iron skillet over medium heat. Once hot, add the onions and garlic, cooking 1 minute. Add the mushrooms and sauté them in the onions and garlic 6-7 minutes or until the onions have softened and started to caramelize. Transfer the mushrooms and onions to a dish and cover to keep warm while cooking the meat patties.
  5. Increase the heat to high and add the meat patties in a single layer. Allow them to cook 3-5 minutes on each side depending on how done you prefer. Transfer to a plate to rest until ready to assemble.
  6. Butter one side of the bread with a 1/2 tablespoon of butter, and spread some of the mayonnaise and ketchup sauce on the other side.  Reduce the heat to medium-low and lay the bread on the bottom of the hot pan butter side down with. Quickly layer the bread with slices of Swiss and Gouda cheese, the mushroom and onion mixture, and a mushroom meat patty. Butter another slice of bread, spread the mayonnaise and ketchup sauce on the other side, and place it butter side down in the skillet and top with slices of Swiss and Gouda cheeses. 
  7. Allow the sandwich to cook about 3-5 minutes, or until the cheeses have started to melt and the bread has toasted a golden brown. Turn the cheese only slice of bread to top the sandwich and transfer to a plate. Repeat with the remaining sandwiches. 
  8. Serve immediately once assembled.
