• Ingredients:
  • 2 tablespoons olive oil
  • 1 large white onion, diced
  • 4 cloves garlic, minced
  • 1 chouriço sausage, thinly sliced
  • 8oz package of sliced FunGuy white button mushrooms
  • 1 teaspoon dried oregano
  • 1 bay leaf
  • 6 cups frozen peas
  • 14.5 ounces can of diced tomatoes
  • 8 ounces tomato sauce
  • 4-5 cups water
  • 6 eggs
  • Salt and black pepper to taste

Not all comfort foods have to be pasta or chicken soup. Sometimes they can be healthy, hearty, AND comforting! 

Much like this Portuguese style peas stewed in a pool of garlicky chouriço sausage, earthy mushrooms, and rich tomato sauce. Add some eggs to the pot for poaching a few minutes before serving is a delicious bonus!

DIRECTIONS:

  1. Heat the olive oil in a large pot over medium high heat. Add the onion and garlic and cook for 2 minutes, stirring frequently. Add the chouriço to the pot and cook another 3-5 minutes or until just starting to brown around the edges. Toss the FunGuy mushrooms into the pot along with the oregano and bay leaf and cook, stirring frequently, another 3-5 minutes. 
  2. Dump the frozen peas into the pot along with the diced tomatoes and sauce and stir well. Pour in the water, making sure it just covers the peas. Cover the pot and bring it to a light boil before turning the heat to medium low and allowing it to simmer 20-30 minutes, stirring occasionally. 
  3. Crack the eggs, one at a time, into a small bowl and drop them into the simmering pot in separate places. Allow them to cook 5-8 minutes depending on how done the yolk is desired to be. 
  4. Taste and season the peas with salt and black pepper to taste before ladling the peas, mushrooms, and an egg into individual bowls. 
  5. Serve immediately. 

Note: If Portuguese chouriço is unavailable use the cured Spanish chorizo, Portuguese linguiça or if you must, Andouille sausage.
