• Ingredients:
  • 2 packages of FunGuy oyster mushrooms
  • 5 tablespoons olive oil, divided
  • ½ teaspoon coarse salt
  • ½ cup ketchup
  • ½ tablespoon Dijon mustard
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon red wine vinegar
  • 1 teaspoon garlic salt
  • ¼ teaspoon smoked paprika
  • ¼ teaspoon onion powder
  • 2 tablespoons brown sugar
  • black pepper
  • 4 tablespoons mayonnaise (optional)
  • 4 sandwich or hamburger buns

Our oyster mushrooms are pulled into strips, grilled until tender and crisp around the edges, then tossed in a sticky sweet and tangy homemade barbecue sauce.  Just pile those mushrooms onto your favorite sandwich roll or buns, and serve while it’s warm with an ice cool beverage!

DIRECTIONS:

  1. Brush off any debris from the FunGuy oyster mushrooms with a damp cloth and trim the ends of the stems. Pull the mushrooms apart into long strips and transfer them to a mixing bowl. Drizzle the mushrooms with half of the olive oil and sprinkle with the salt. Toss well to coat the mushrooms and set aside. 
  2. In a sauce pan, whisk together the kitchen, mustard, Worcestershire sauce, vinegar, garlic salt, smoked paprika, onion powder, and brown sugar. 
  3. Transfer the sauce pan to a burner over medium heat and bring it to a simmer. Allow the sauce to cook, stirring occasionally to keep it from burning and sticking to the bottom, about 10 minutes. Once it has reduced down a bit and thickened turn off the heat. Taste and add the black pepper as desired and cover, allowing it to cool while preparing the grill for the mushrooms. 
  4. Prep the grill by lightly brushing one tablespoon olive oil on the grill and set it to medium high or build a medium sized fire with charcoal. 
  5. Once the grill is hot, lay a grill mat in a spot with indirect heat and add the oyster mushrooms in a single layer on top to cook 6-7 minutes, or until crispy around the edges and tender. Transfer the cooked mushrooms to a bowl. 
  6. Pour the barbecue sauce over the cooked oyster mushrooms and mix together until all the mushrooms are coated in the barbecue sauce. 
  7. Assemble the sandwiches by spreading the mayonnaise on the inside of each bun, add with a mound of barbecue pulled oyster mushrooms to the bottom bun and top with the other half. Repeat with the rest of the mushrooms and buns.
