• Ingredients:
  • 8oz package of sliced FunGuy white button mushrooms
  • 3 tablespoons olive oil, divided
  • 1 cup quinoa
  • 1 cup water
  • 1 cup vegetable broth
  • 2 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt to taste
  • 8 hard taco shells
  • 1 large onion, diced and divided
  • 1 tomato, diced
  • Lettuce, shredded
  • ½ cup shredded cheese
  • Jalapeno slices (optional)

Looking for a vegetarian fiesta option that even the carnivores in your life will love? Look no further than these FunGuy quinoa tacos!

Spiced quinoa substitutes ground meat in this recipe and along with sautéed FunGuy mushrooms and everyone’s favorite taco toppings, no one will even notice that it’s completely meat free! 

Well, they probably will, but no one will be missing it!

DIRECTIONS:

  1. Heat 2 tablespoons of the olive oil in a pan over medium high heat. Add in half of the onion and sauté for 2 minutes. Add the FunGuy mushrooms to the pan and cook 3-5 more minutes or until tender. Turn off the heat and transfer to a bowl and set aside. Set the used pan aside to use later. 
  2. Rinse the quinoa under cool water, then place in a medium-sized pot along with the water and broth. Bring the pot to a boil over medium heat. Reduce the heat to medium low and allow it to simmer about 10-15 minutes, or until the liquid has been absorbed. Turn off the heat and fluff the quinoa with a fork. 
  3. Heat the pan used for the mushrooms over medium heat and add the rest of the olive oil to it. Add the quinoa to the pan along with the chili powder, cumin, and paprika and stir well to combine. Cook 3-5 minutes then turn off the heat. Taste and season with salt as needed. 
  4. Assemble the tacos by spooning the quinoa into the bottom of each taco shell then add mushrooms, onion, tomato, lettuce, cheese, and top with jalapeno slices. 
  5. Serve immediately!
