• Ingredients:
  • 8oz package of whole FunGuy white button mushrooms
  • 1 head cauliflower
  • 1 small onion
  • 2 garlic cloves
  • 1½ cups canned chickpeas, rinsed
  • 3 tablespoons olive oil
  • 1 teaspoon coarse salt
  • ¼ cup crumbled blue cheese
  • ½ cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • salt
  • black pepper
  • 2 cups arugula

Having trouble with the eternal question: What’s for dinner? Don’t be blue, the FunGuy has a simple solution with a new healthy salad smothered in homemade blue cheese dressing! 

Bite sized cauliflower florets, hearty chickpeas, and our button mushrooms are seasoned with simple olive oil and a sprinkle of salt and roasted until tender. Tossed with peppery arugula after for a bit of vibrant green and drizzled with a homemade blue cheese dressing. 

Low effort to make, light clean-up, and delicious to eat!

DIRECTIONS:

  1. Preheat oven to 400F. Line a baking sheet with parchment paper.
  2. Brush off any debris from the FunGuy mushrooms with a damp cloth, cut them into quarters, and place in a large mixing bowl. Thoroughly rinse the cauliflower under cool water, trim away any leaves and cut into bite sized florets, and add to the bowl with the mushrooms. Peel the onion and garlic. Dice the onion and mince the garlic before adding them to the bowl with the mushrooms and cauliflower. Add the rinsed chickpeas to the bowl. 
  3. Drizzle the olive oil over mushrooms, cauliflower, and chickpeas. Season with the salt and toss well to evenly distribute. Transfer everything to the baking sheet in a single layer. Place in the oven to roast  for 30-35 minutes or until the cauliflower has cooked through.
  4. While the mushrooms and cauliflower roast, prepare the blue cheese dressing. 
  5. Mix the crumbled blue cheese, Greek yogurt, lemon juice, onion powder, and garlic powder together in a bowl. Season with salt and fresh ground black pepper to taste. Cover and refrigerate until ready to use. 
  6. Once the roasted mushrooms, cauliflower, and chickpeas are cooked, remove them from the oven and transfer to a large mixing bowl. Add the arugula and mix well. 
  7. Serve immediately with the homemade blue cheese drizzled on top!
